This is an easy chicken curry with onions and pineapple that kids simply gobble up! Serve with hot rice.

  • 1L chicken stock
  • 4 boneless, skinless chicken breasts
  • 200g rice
  • 1 onion
  • 100 gr plain flour
  • 100 gr butter
  • 4 teaspoons hot curry powder
  • 8 slices pineapple, sliced into bite-size pieces

  1. Bring 1 litre of chicken stock to the boil; add chicken breasts and poach in the stock until tender, about 15 minutes. Scoop chicken breasts out with a slotted spoon and slice into cubes; reserve poaching liquid.
  2. Meanwhile, cook the rice according to the directions on the packet.
  3. Melt butter in a pan; add onions and fry until golden and starting to soften. Stir in plain flour. Add 250ml poaching liquid and stir well to create a sauce. Stir in curry powder.
  4. Add chicken and pineapple to the curry; warm through and serve with cooked rice.

Pineapple Chicken Curry

Today on the menu is Pineapple Chicken Curry, having a taste of Thai without stepping out of your home is not a bad idea, right? You can travel through food without being to the actual destination. Pineapple Chicken Curry is a delicious and very easy meal to make. My family and I enjoyed it whenever I make it and want to share the recipe with Y’all. Let’s get started.

  • 1 Whole Pineapple (or a can pineapple)
  • 2 Tablespoons Fish Sauce
  • 2 Tablespoons Curry powder
  • 1 Pound Chicken Breast (diced)
  • 2 Tablespoons Brown Sugar
  • 1/2 Red bell pepper (Julienne)
  • 1/2 Green bell pepper (Julienne)
  • 1/2 Cup Chicken broth or water
  • 1 Cup Coconut milk (you can use more)
  • 1/2 Cup Peas or any vegetable of your choice
  • 2 Tablespoons Vegetable Oil
  • 1 Onion (chopped)
  • Salt and pepper

Place a saucepan or a pot over a medium-low heat.

Saute the chopped onion and add chicken (personal preference) you can add chicken later.

Add curry powder. (sorry I forgot to take picture of this stage)

Add half of the coconut milk, mix and let all the components combine very well.

If you didn't add chicken after you saute onion you might want to do so now.

Add chicken broth or water whichever one you are using.

Let the mixture sit on a low heat for about 10 minutes.

Add the fish sauce, brown sugar.

Mix and add the bell peppers and bring the mixture to a boil.

Add peas or any vegetable you're using. You can use eggplant, bamboo shoots etcetera. Add the rest of the coconut milk.

Pour in the pineapple. Season with salt and pepper.

Mix and turn the heat. Leave the saucepan on the residual heat.

Feel free to adjust the recipe to suit your preference. You can use storebought can pineapple, just drain the liquid.

To begin making the Pineapple Gojju Recipe first place a pan on the heat. On a medium heat dry roast urad dal and set aside.

Then dry roast the coconut till it turn slightly brown and toasted. Make sure not to burn it. Remove it and set it aside.

Roast the red chillies with just a drop of oil, in the same pan.

When the above roasted ingredients have cooled, put them in a mixer jar and grind into a paste along with tamarind paste, using water as much as it is required.

Then, place a deep pan on the heat and add some oil to it. When it is warm, add mustard seeds and let it crackle. Add curry leaves and when they crisp up add in the pineapple chunks.

Saute them by tossing on a medium heat until they soften and the edges start browning. At this point add the ground paste followed by 2 cups of water and allow the curry to simmer.

Add salt and jaggery, mix well and bring it to a boil. Simmer for 10 mins more on a low heat, till the gravy turns thick.

Serve it hot with steaming hot Steamed Rice and ghee or with Chapatis. You can also store the gojju in an airtight container in the refrigerator for a few days.

How to make a Coconut Cream Pineapple Curry

You will ask how to make a curry? It&rsquos easy let&rsquos do it together now. I will show you how to make the basic version and how to make a more fancier version.

Simple as that: Start with a casserole dish. Use a bit coconut oil or vegetable broth for oil free cooking.

Add onions and garlic, fry them for around 3 minutes until lightly golden.

Then add coconut milk and spices. Cook for around 5 minutes.

After 5 minutes, add pineapple chunks to that casserole and cook for 7 minutes longer.

Whiskey Pineapple Chicken Recipe

This chicken will have you in a state of bliss and excitement at the same time, offering sweetness, rich molasses flavors, and a subtle note of heat. Ensure that you marinade the chicken according to the recipe the night before so the seasonings permeate throughout the meat and allows for tenderness.

For the marinade:

  • 2 tsp garlic powder, onion powder, chili powder, paprika, coriander

Dani’s top tips for getting kids to try curry:
- Don’t go overboard with the chilli, use a little but then mellow it out with coconut cream or milk or sweeten with some rice syrup or coconut sugar if needed too.
- Don’t be afraid to start with basic curry powder like Keens Curry, that’s what I grew up on and still use in my pantry, things like curried sausages or mince are still staples at my house. You can then start to explore more mellow curry pastes like Yellow or Massaman Thai style pastes too.
- Younger kids like things that are soft to eat and easy to eat so make sure that you dice up your ingredients into smaller pieces and cook your ingredients long enough so that it's softer.
- Offer your kids a variety of different coloured veg and textures from a young age and be prepared for kids to spit out and reject before they eat them properly. It can take 10 times for kids to try something before they actually decide to like it, so be persistent and know that in the long run its worth the mess and waste.


Pineapple Fried Chicken Recipe

Pineapple Fried Chicken is our newest addition to our Fried Chicken Recipes. This fried chicken variation is quite tender and has a nice collaboration of flavor from the chicken and marinade.

This Pineapple Fried Chicken recipe is simple. I started out by cutting a whole chicken into serving pieces. Each piece was washed with running water. I make sure to wash poultry products longer to avoid bacteria and contaminants. It is important to drain excess water and dry the chicken with a paper towel or a clean cloth after washing.

The marinade is made-up of crushed pineapple, lemon soda, soy sauce, some seasonings, and spices. I used canned pineapples, but you can always use fresh ones in fact, fresh is better. Pineapple juice can always be used as a substitute for crushed pineapple. For better tasting pineapple fried chicken, make sure to marinate for at least 6 hours. I usually do it overnight to get the optimum effect.

Japanese Curry is delicious comfort food from Japan anyone can make! Chicken thighs and veggies simmered in an easy curry sauce made with store-bought roux.

Chicken Katsu is one of the best and easiest Japanese dishes you can make. This Japanese-style curry is another Asian Recipe that you won’t believe how easy it is to make at home!

JAPANESE CURRY

Most of the time when you see Japanese Chicken Curry on a takeout menu, it is made with Chicken Katsu or Pork Katsu (tonkatsu), with the curry sauce on the side. While we all love deep-fried katsu, this dish made with chicken thighs is much healthier so you can make it all the time with a lot less work (and calories).

Japanese Curry is a takeout dish that can be hard to find depending on where you live, so if you’ve never heard of it or tried it, you aren’t alone! One of the best things about making takeout at home is that you can try delicious global cuisine no matter where you live. No expensive travel required to get authentic dishes you and your family will fall in love with.

If this is your first time trying Japanese Curry, it is a much milder, sweeter and thicker curry than you may be used to. Unlike Indian Curry or Thai Curry, the curry sauce is more stew-like, similar to gravy and less like a broth. Japanese-style curry roux uses garam masala but does not have spicy curry powders or chiles like other cuisines.

You can always make your own curry roux homemade but the ready-made roux is just as delicious, saves you about 30 minutes, and is actually what most home cooks in Japan use! You could also serve it with a lightly seasoned noodle like Garlic Noodles or easy veggies like Roasted Broccoli. Japanese Curry is also delicious on its own, with Dinner Rolls to soak up every drop of the curry sauce!

What is a Japanese Curry Roux?

Curry roux is a pre-made concentrated curry demi-glace, dried out so that it is shelf stable. Think of it like a Japanese-style gravy, with lots of flavor and makes cooking so much easier! There are few top brands, but S&B Golden Curry is probably the most widely available at supermarkets. You’ll find it in the Asian foods section of the grocery store.

Pineapple is great in Asian cooking, such as the Thai shrimp and pineapple curry recipe I shared last week.

Today, I am going to show you how to make a delicious chicken and pineapple fried rice.

I am sure everyone here has had Chinese fried rice as it&rsquos one of the most popular Chinese recipe.

With the addition of pineapple, the regular chicken fried rice becomes so much more interesting, and delicious, because of the sweet tang of the pineapple.

It also helps to make the fried rice tastes less greasy as every bite is bursting with the freshness of the pineapple.

What I love most about this chicken and pineapple fried rice is the slightly caramelized taste of the pineapple, after stir-frying in the wok.

While the pineapple still tastes fresh and juicy, there is a little something as the sweetness is slightly caramelized.

Many people ask me about overnight rice.

Put simply, it&rsquos just basically rice from yesterday.

As the rice loses the moisture content, it&rsquos perfect for fried rice so every single bit of rice is drier so your fried rice won&rsquot be mushy and &ldquowet.&rdquo

Whenever I go out to Chinese restaurants, I always ask for an extra serving of rice so I can just pack it back and keep in the fridge overnight.

The next day, I have the perfect overnight rice for my fried rice.

It&rsquos so easy and you don&rsquot even have to make steamed rice.
