  • 2 tablespoons olive oil
  • 175g minced onion
  • 2 cloves garlic, minced
  • 3 (2.5cm) pieces fresh root ginger, minced
  • 475g ketchup
  • 100g dark brown soft sugar
  • 4 tablespoons treacle
  • 125ml spiced rum, divided
  • 3 tablespoons hoisin sauce
  • 2 tablespoons tomato puree
  • 2 tablespoons sherry vinegar
  • 1 tablespoon chilli powder
  • 1/8 teaspoon cayenne pepper

  1. Heat the olive oil in a saucepan over medium-high heat. Stir in the onion, garlic and ginger, and cook until tender. Reduce heat to low. Mix in ketchup, dark brown soft sugar, treacle, 3/4 of the rum, hoisin sauce, tomato puree, vinegar, chilli powder and cayenne pepper. Cook and stir 5 minutes, until well blended and heated through. Stir in remaining rum.

Made it a couple of days in advance. Tasted like sweet and sour sauce but after being refrigerated for a day it tasted much more BBQ-Y-03 Oct 2015


Excellent! I found it a little tangy, but that could have been cured by a little extra boiling! I poured it over chicken and served with rice & beans.-04 Apr 2007
