We clean the carrots and celery, we wash them well under cold water, we wipe them with absorbent kitchen towels, then we pass them on the grater with small meshes.
We prepare homemade mayonnaise from the yolk of a boiled egg + 1 yolk from a raw egg + 1 teaspoon of mustard + 200 ml of sunflower oil.
Sprinkle salt and chili flakes over the mayonnaise to taste, green dill, then add the mayonnaise over the grated vegetables, mix well.
At the end we add 1 tablespoon of lime juice, we mix to incorporate the aroma in the whole composition.
Let the salad cool until ready to serve.
